About four years ago we received a surprise visit from the AeroPress inventors and owners of the company that produces the device. I had been using it at home for a number of months so their visit to our company Roastery was a gift. I had been wondering how this simple tube and piston syetem could produce the best tasting coffee results I had ever gotten from a coffee brewing device. When they visited, I had been in the coffee Trade for 37 years!
What I couldn't understand was how extraction of all the flavor compounds in coffee could be extracted in such a short time(30 seconds)and not produce a weak cup of coffee. In addition, the method was bringing out the best flavors and leving behind the ones that were not needed (Tars and Tanins). The flavors were
clean, crisp. Flavors were clear and intense with an emphesis on sweet and floral. The engineers did not reveal any secretes and I didn't push to know because the simplicity of it all was enough. In my opinion, this is the best coffee brewer to ever be invented to make a single cup of coffee.

Please re-direct this note to Paul&Joan, thanks.
The top photo of you both on the 'family run business' web page is evocative, no, as the writers would say, redolent of the times. Your recollection of the Noyo building and the San Juan links Thanksgiving CC with the sweep of history. I'm certain countless artists are touched by the scene from that same view across the river. Warmest regards and personal best wishes for your continued success in all that you have touched, from me, from Ellen, Georgia (Ellen's Mom, now 95), from the happy family of Shawnis, husband Dave, and from the actual central point of the universe, the beloved Joshua Tinker, nearly 10, our perfect grandchild. Be well, happy and good.

Hi Mike - sorry we don't have the Amaretto anymore!
However, we do have a few great flavored coffees - a couple of hazelnut coffees, vanilla bean, dutch chocolate and my favorite, the Grey Whale Blend (with just a hint of vanilla):
