| Many tastes, two trees, lots of work

o matter how many products we coffee makers
come up with, they all begin with only two species of coffee
tree: robusta and arabica. They also begin with
lots of these trees, as each tree yields only about one pound of roasted
coffee a year. |

Arabica rules
|
|
|
Coffee fanciers and producers have long
agreed that arabica varieties are superior. Robusta has a flat, one-dimensional
taste. Tasting arabica is a much richer, more complex and satisfying experience.

Arabica costs
|
|
Arabica plants are also more
labor-intensive to grow and harvest. They require high altitudes whose terrain rules out
heavy equipment for cultivation, harvest, and transportation.
Arabica coffee is very much a handmade product.

Robusta cans
|
|
Robusta trees grow at lower
elevations in open fields, so robusta is easy to maintain and harvest with large
equipment. Huge producers of canned coffee favor robusta because
it lends itself to mass production. Most canned coffee is robusta blended
with some arabica.

Our choice
|
|
Thanksgiving's coffees are exclusively
arabica varietals and blends. The only
exception is Pony Express,
our high-caffeine product. Robusta has twice the caffeine content
of arabica, so for Pony Express we select the highest-quality
washed New Guinea robusta.
